Juicing Tip and Lyme Symptoms

Posted December 2, 2014.  You guys know I  am a big fan of juicing.  I believe that was one of the most effective arrows in my quiver when I had Lyme disease and Lyme symptoms.  There were times when I had Lyme disease when I could not eat.  Thank goodness for juice!  But of course I’m taking about green juices, not sweet juices.  Here’s a trick I still do to make sure I keep drinking green juice.  First thing in the morning, after I take my Liposomal Vit C (look on Products I Use page to see that), and set my teapot to boil for my Brassica Green Tea (also on Products I Use), I juice several carrots, greens of all types and a small bit of fresh ginger root.  I’ll bottle it up and have it ready for later in the day when I’m busy, tired or just need to grab and go. Maybe you can’t do that every day, maybe start with one day a week?  If you have friends who are offering to help you because you are sick, or your kids want to be helpful, ask them to make and bottle up some juice for you.  That would be a tremendous help for you in your quest for 100% recovery from Lyme disease and it will make them feel good doing it for you.

Purpose and Lyme Symptoms

Posted November 30, 2014.  When I was really sick with Lyme disease and enduring all the awful Lyme symptoms, one of the ways I kept myself going mentally was to focus on a sense of purpose for my life.  Now, mind you, I had no idea what that purpose was.  How much purpose can you have as a sick Lyme disease person?  But I had a sense of it, even though I didn’t know exactly what it was.  I still don’t know what my purpose is, but each new morning, something unfolds.  Even when I was sick, I tried to do something nice for someone else, in whatever tiny way I could.  Maybe it was just sending a positive e-mail to someone (when I got to the point of being able to sit up and write on the computer).

God made you for a reason.  You have a purpose even though right now it may seem murky.  Hang in there and do whatever little thing you can each day… and then in whatever little way you can, through your awful pain, feel good, for that moment, that you are fulfilling your purpose.  It will get better if you stay positive and focus on your recovery.  Then your purpose will unfold a little more each day.  Always thinking of you!

Diamonds and Lyme Symptoms

Squash Cookies and Lyme Symptoms

Posted November 22, 2014.  Just in time for Thanksgiving!  I love these cookies!  A great, easy, healthy dessert with no sugar but high in vitamin A.

Squash Cookies

1 can organic squash

2 cups almond meal

1 cup raw walnuts

1/2 cup coconut milk (or other milk you like)

2 eggs

2 Tbsp. pumpkin pie spice

1 tsp. baking powder

 

Put everything in your blender, pulse a few times then put on cookie sheet greased with coconut oil.  Cook at 400 for about 20 min.  Delicious!!

Sweet potatoes are one of the best sources of beta-carotene.  This recipe has no sugar, they are plenty sweet for me, as my palate is used to low or no sugar, but you can always add coconut sugar or maple syrup if you want them a little sweeter.  Try without sugar first.  Sweet potatoes are naturally pretty sweet! (you can always add raw dark chocolate chips too) For kids I add 4 Tbsp coconut sugar and 1 cup dark chocolate chips, and I switch the walnuts for a cup of trail mix or granola.  Whatever your kids like!!
