But remember, fats are important for cellular membranes to function properly. Healthy cellular membranes will allow nutrients into the cell and allow toxins out of the cell. When they leave the cell the toxins go to the liver and kidneys and then they can leave the body. On the other hand, trans fats block nutrients from entering the cell and block toxins from leaving the cell, thereby preventing detoxification. Trans fats are oils in margarines and partially hydrogenated oils in processed foods. Coconut oil and coconut milk are not trans fats. Your ability to recover from lyme disease and lyme symptoms will be much diminished if you are consuming processed foods filled with trans fats. Your cells will not be able to adequately intake nutrients nor will they be able to properly detox all the toxins in your body.
Coconut milk, cream and oil provide a good source of health-promoting medium chain fatty acids. There used to be information that said that coconut milk, cream or oil was very bad for you because of the saturated fat content. There was a lot of pressure to tax “tropical” oils such as coconut and demonize them so as to protect domestic oils such as soybean oil. But there is a lot of science behind the benefits of coconut oil. It helps to prevent viral, bacterial, and fungal infections, as a result of its antimicrobial component, lauric acid, which is found only in coconut oil and in breast milk. (You are getting the coconut oil when you consume the milk or cream, just not in as concentrated an amount.) The rich medium chain fatty acids in coconut oil provide an immediate source of fuel and energy, and enable the body to metabolize fat efficiently. This helps athletes and those with impaired immune systems, such as those with lyme symptoms

or those with other autoimmune diseases. Importantly, unlike with some saturated fats, coconut oil does not raise blood cholesterol. I add coconut oil to my smoothies and I take a couple of teaspoons of it straight up, daily.
